This Season's Bean : Peru Chirinos
This season we've opted for a sweet and flavoursome bean from the Chirinos region of Peru. It's process is a pulped natural. Most farmers in this region have hand pulpers which they use to pulp the coffee cherries, then they are placed into fermentation tanks, before being patio dried. This infuses the coffee with the sweet flavour of the fruit. This makes for an intense aroma and fruity cup of coffee reminiscent of a cherry in the bottom of an old fashioned, with blood orange acidity.
The Producer
This lot is a blend of coffees from various smallholder producers across the Chirinos region. The average farm size amongst these producers is 1.5 hectares, with the main varieties grown being caturra, catimor and bourbon.
Coffees were purposefully selected and blended together based on tasting notes typical of the region. All component lots come from high altitude areas and the early harvest, processed and dried by the producers on their farms.
The Roast
The beans arrive as green with a sugary sweet aroma, we roast the coffee delicately until it just about reaches a medium roast level. This allows the sugars in the coffee to develop, removing some of the more intese acidity and leaving a nice balance between sweetness, acidity and bitterness. We drop the coffee once the aroma becomes mouth watering.
